As just obtained from the TOROC (Torino Olympic Committee), approximately 85 countries have indicated an interest in participating so far. Of course, this list will be updated - as athletes from countries qualify for (or don't qualify for) these winter events. Some of the unique countries include: Trinidad & Tobago, Costa Rica, Senegal, Iran, and Bermuda.
